Light but Nutritious

Hallo ihr Lieben

Na, wie siehts aus? Zwei Monate des neuen Jahres sind bereits vergangen, und dies ist doch eigentlich ein guter Zeitpunkt, um mal zurückzuschauen, wie die Neujahrsvorsätze umgesetzt wurden.
Ich hoffe natürlich, dass ihr alle noch fleissig und mit Motivation dabei seid, auch wenn dies bestimmt nicht immer leicht ist.

Deshalb heute eine kleine Hilfestellung in Form eines Rezepts für alle diejenigen, die sich für eine gesunde Ernährung entschieden haben. Schnell zubereitet, leicht und dennoch voller gesunder Nährstoffe, ist dieses Abendessen definitiv die bessere Wahl, als der rasche Gang zu McDonalds & Co. =)
Diese Avocado-Hüttenkäse Knäckebrote enthalten gesunde Fette, viel Protein in Kombination mit ein wenig Kohlenhydraten (aber dennoch nicht zu viel, also perfekt für ein leichtes Abendessen).


Ihr braucht dazu:
- 3 Scheiben Vollkornknäckebrot
- 150g Hüttenkäse
- 3 TL Tomatenmark
- 1 Avocado
- Paprikapulver & Schnittlauch

Und so geht's:
1. Bestreicht eure Knäckebrotscheiben mit je einem Teelöffel Tomatenmark und verteilt dann gleichmässig den Hüttenkäse darauf.
2. Avocado halbieren, Stein entfernen und das Fruchtfleisch in dünne Scheiben schneiden. Mit diesen belegt ihr nun eure Knäckebrote.
3. Zum Schluss bestreut ihr das ganze mit etwas Paprikapulver und Schnittlauchröllchen.

How are things going for you? Two months of the new year are already over again and to me this seems like the perfect moment to reflect on how you've been dealing with your new year's resolutions.
I really hope you're keeping up the good work and that you're still motivated, eventhough this might not always be easy =)
Therefore I have a recipe for those of you who chose to start eating healthy this year.
 
These Avocado-Cottagecheese Crispbreads are quickly prepared, light but still packed with nutrients and definitely a better choice than the quick run to McDonalds & Co. =)
 
 
Here's what you'll need:
- 3 slices of whole wheat crisp bread
- 150g of cottage cheese
- 3 tsp of tomato paste
- 1 Avocado
- some paprika spice & chives
 
How to prepare:
1. Spread each crisp bread with 1 tsp of tomato paste and add the cottage cheese on top.
2. Slice up your avocado in thin slices and put it on top.
3. Add some Paprika spice and chives and it's done already =)
